A Big Bowl of Strawberry Ice-cream!

I had so many strawberries in my freezer. So. Damn. Many. So I made icecream. It was great.


I used RecipeTinEats' recipe as I keep hearing amazing things about them and I don't have an icecream maker. Even more important it used 1kg of strawberries and no added sugar! (I mean condensed milk has so much sugar... But I didn't add any sugar...)


With just 4 ingredients I set to work. I roasted the strawberries...yes roasted. My goodness it makes it so much yummier! The 45 minutes didn't seem to have the desired effect, probably because my strawberries were frozen and had sooo much juice. So I left it for longer... I may have burnt them a little... But I removed those bits and it turned out fine! Blend it up and add vanilla and condensed milk. Yuummmmmmm.


Beat the cream until... whipped. I just used a full 600ml container, not the 500ml suggested. More icecream! Gently fold the two mixtures together. Nagi suggests folding small amounts of cream in first, which I did (good girl Beth!). It tasted scrumptious and just needed to set.


The result was a creamy icecream that was most definitely strawberry. My partner didn't like it because of the mouth-feel (it does kinda coat your tounge), so more for me! When scooping you definitely need to let it defrost a little, otherwise it is rock hard.


Love to use this method of roasting strawberries for another ice-cream, maybe one that doesn't have condensed milk. I assume the condensed milk helps it remain creamy and smooth while freezing though... We'll see what happens!
